Ratatouille
For 4 people
INGREDIENTS
- 4 tomatoes
- 2 aubergines
- 2 onions
- 1 sweet red pepper
- 1 zucchini
- 2 garlic cloves
- thyme & rosemary
- Cauvin Selection organic extra virgin olive oil
- salt & pepper
PREPARATION
- Rinse the vegetables and slice the zucchini and aubergines into rounds. Slice the sweet pepper, making sure to remove the seeds.
- Peel the tomatoes and slice into rounds.
- Finely chop the onions and garlic.
- Add the Cauvin Selection organic extra virgin olive oil et y faire revenir l’ail puis les oignons.
- Add the aubergines and then the sweet pepper. Reduce the heat and cook for 7 minutes.
- Add the zucchini and cook on low heat for 6 minutes.
- Finally, add the tomatoes, season with thyme and rosemary and then with salt and pepper to taste. Cover with a lid and cook for another 20 minutes on low heat.
