PREPARATION

  1. Rinse the vegetables and slice the zucchini and aubergines into rounds. Slice the sweet pepper, making sure to remove the seeds.
  2. Peel the tomatoes and slice into rounds.
  3. Finely chop the onions and garlic.
  4. Add the Cauvin Selection organic extra virgin olive oil et y faire revenir l’ail puis les oignons.
  5.  Add the aubergines and then the sweet pepper. Reduce the heat and cook for 7 minutes.
  6. Add the zucchini and cook on low heat for 6 minutes.
  7. Finally, add the tomatoes, season with thyme and rosemary and then with salt and pepper to taste. Cover with a lid and cook for another 20 minutes on low heat.
